Can someone illuminate for me the reason why I shouldn't just put two sheets on the Spinnaker?
Treat it like a drifter? Is it that since you can't go out on the bowsprit to clear a snag that you're asking for trouble when coming about?

Buckeye, you can sheet both sides but from my own experience with my PocketShip and the asymmetrical spinnaker, you've got enough lines everywhere already. It was stable enough under way to move forward with my dad on the tiller to pass it around to the other side. If you have properly shadowed the spinnaker in the lee of the main, you'll be working to keep the spinnaker out of the water without worrying about snagging or having properly released the sheet from the prior side. Also, the spinnaker definitely worked best on longer runs.
