Gluzilla

I have a tube of MAS's Gluzilla, which I have not tested as yet because the nozzles (two are included) can only be used once. I don't know what they use for a thickener and they don't say on their website. According to CLC it is about the same consistency as Vaseline and in the picture looks similar to silica-thickened epoxy.

My hope is to use Gluzilla for the "tack welds" and similar jobs during stitch and glue construction of the hull. Has anyone tried this product? I there some reason it is not a good idea to use it as I am planning?

That's a perfect use for that product. In fact it works very well in many situations. The downside it exactly what you expressed. There are only 2 mixing tubes/nozzles and once they clog up from non-use they have to be replaced. Essentially you only have two session to use the entire tube.
