Trailes Trailer Bunk Final Adjustments

I have received shipment completed the build-out of my Trailex trailer - this week I will be moving my pocketship (El Sea Bien) from the garage, and onto the trailer for my first launch.
Does anyone have tips or techniques you used to set the bunks at the right height and the right angle? I am cautions (and smart) enough to know not to be reaching in under the bunks and loosening and repositioning the height and angles with the boat on the trailer, but I see no real practical way to be loading and unloading the boat for 'trial fittings' or adjustments.
Any advice or experiences anyone can pass to me on how to effectively measure and ensure a good fit on the first try?
